Bagels. You heard right, BAGELS !

 Coffee Shop has bagels!

 Recently we've been buying medialunas (croissants) from a French baker. No joke, he's really French and medialunas have reached new heights here.

He's making us like these little ones that are a sort of snack and to the larger ones we add ham and cheese. Medialunas Rellenas are a hot ticket and customers are glad to find them.







Our baker was willing to give bagels a try. He's never had one.
I know.
I don't know how many tries it took him, but by the third batch brought here they are nearing perfection.
I think the recipe's a good one, the baker a genius, good water and we are nearly sea-level, so there you have it.

 Mucha Leche Away

Augie, we hardly knew ye. Well, I'm sure we've only knicked the surface.

After an outstanding term here, our pal (as well as assistant manager) has moved on. Not easy saying goodbye to an employee like that. Especially when he'll be coming in all the time anyway.

So it's with heavy heart we bid Sr. Leche farewell, for the time being that is.

Eat Here Now

I think I remember a place in Manhattan with that name. Could have been just a sign, but I rember liking it.
There's a Chinese truck here called GO NOW. Same deal, keep it simple.

Meanwhile at Coffee Shop, we've got a test run of maybe 10 menus going.
They look good.
CEBRA Comunicación Visual, a local design group is making my design notions into handy pamphlets, signs and now a menu. All the proper lay-out of everything seen so far at CS is from these guys. Big shout out to Marcello, Camilo and the rest.
Also none of this is possible without Carlos Filgueira. We are friends with similar attachments......

Kitchen Nightmare

I love being Chef Ramsey in our little version of the show, but I bet he doesn't do the actual cleaning. Yuk.

The positives outweigh the negatives here by far, but as always, God is in the details.

We are seriously considering this place, working the numbers-if you will, to asses what's being offered. 
Businesses selling their lease, with or without equipment/stock abound here and they're not so cheap. It's surprising considering most are selling a failing business. Our guy doesn't even own most of what you see (belongs to the landlord), but he does have the right to sell a chance to be the next chump to take a shot.

Down here? The next big thing performing tonight!

A Brooklyn style coffee shop is sure to be a hit. 
We have in mind some changes to this place; in appearance and to infuse some much needed energy. It appears to be sleeping now.

It's got some style already

We are consulting anyone we think may be able to help; assembling plenty of facts and even some projections, but we can only guess at what it's actually worth. Plus, even if we find those who know enough to really guide or dissuade us, will they say?

In the end our talent, wits and perseverance will have to carry the day.

 

I see good things coming. 

I can even taste them.

Spaces

I'm not sure what stage of the search we're in because it began many years ago. Of this latest search to find a spot for our long awaited coffee shop, we are somewhat midway. We started out this year as casual shoppers, lookie-loos with no real intentions towards what we saw. We kept narrowing the search; places for sale not rent, the size and of course location, location, location. We are now serious about a place in particular.
San Salvador seems poised to sell. I think it may not be too much longer. Of course this is pivotal as those funds would be a necessity and a bit optimistic. So, as we often do, we're preparing to spend money we have not yet earned.
Today we measured and got a copy of the building's plan. Here are some pictures of the place..
